Forsythia Syrup
Ingredients : Forsythia Flower tea and Cane sugar
• Fresh flowers collected during peak blossoming
• Fragrant floral tea steeped overnight, then sweetened and cooked down into a simple syrup
Flavor Notes : Lightly floral and sweet, undertones of pollen and honey
Suggestions : Adds a lovely sweetness to tea, tastes great in seltzer. Pour it over pancakes or waffles or anywhere you'd usually enjoy honey. Add it to your granola or oatmeal! Try it on crepes or over a fruit sorbet!

NB : Tea is poured through a fine filter after boiling, but small flecks of nature do show up in some jars.

Spicy Ginger Syrup
Wow! Like a little heat with your treats?! This spicy ginger syrup is just fantastic! It takes the well-known and loved bite of ginger root and adds a super sweetness to it, then kicks it up with the heat of some crushed red pepper. Sooo good!
Serving Suggestions : It's really good right off the spoon! But also tasty in tea or mixed drinks, great for making your own ginger ale or ginger beer, or used for seasoning a stir fry. I'd try it anywhere honey or maple syrup is commonly used! And I have to say, hot and spicy ginger syrup over some cold vanilla gelato makes a really awesome swirly, goopy mess that builds heat even as it cools it off... seriously amazing! More ideas in-coming, but send me some of your own!

Two wonderful syrups from the same tree!
• The pine needle syrup is a unique, mild tasting, sweet syrup that delivers a hint of pine and honey.
It's made starting with the careful selection of new spring growth of white pine needle tips, which are then steeped into a pine tea. Next it's boiled down with sugar to make a sweet syrupy treat and saved in sterilized canning jars.
• The pine bark syrup is a unique, strong tasting, sweet syrup that carries a distinctive pine flavor.
This one is made starting with the thick pieces of mature, loose bark, which are then steeped into a strong, bitter pine tea. Next it's boiled down with cane sugar to make a sweet syrup and stored in sterilized canning jars.
They are both tasty and interesting! Numerous sources describe the health benefits of white pine infusions.

Serving suggestions : Well, I know pine syrup is often used for a cough - this would be *the best* tasting cough syrup ever! (I have not personally tried it for a cough yet, but if covid comes back around I'm ready!) Both would be great in tea. The pine needle syrup can be added anywhere you enjoy honey, and the pine bark syrup would make a nice glaze on a ham. I did see a recipe for baked apples with pine syrup and cinnamon that looked really good. I'll have to try that! (But I'm adding nutmeg, definitely) Would love to hear more about your ideas for using this!

QUEEN ANNE'S LACE FLOWER SYRUP
The syrup of summer!
• Queen Anne's Lace has a beautiful bloom that we see during the hottest days of summer. Daucus carota is also known as bird's nest and wild carrot. Some people like to fry the flowers, but I love how they taste when made into a syrup! The flavor of the tea is green and floral, but adding lemon juice makes the magic happen and it takes on an essence of peach on the palate. Add sugar, cook it down to a sweet syrup... Delightful!!

Serving suggestions : Still experimenting with this one!! So far, I've found it's very nice on waffles and goes well in a green tea or chamomile tea. I think it'd also be super nice drizzled on shortbread! Would love to hear more about your ideas for using this!
